History

Originally a sausage producer and delicatessen, William Klein founded Alberta Fancy Sausage Ltd. in 1971. As a master butcher, William brought skills honed in Germany to Calgary and customers at the shop would ask for “The Big Chief” when referring to him. When the switch was made from delicatessen to beef jerky manufacturer, the new brand “Big Chief” evolved.

Although our heritage is European, the Indigenous people are credited as first inventing “jerky” derived from the Quechua word “ch’arki” which means dried, salted meat. As proud Canadians we recognize and celebrate our multicultural country every day, including the unique heritage, diverse cultures and outstanding contributions of First Nations, Inuit, and Métis peoples. Fusing this history with our founders’ nickname resulted in the Big Chief brand you see today.

The Big Chief difference is based on four decades of experience and dedication to quality, with Big Chief beef snacks crafted uniquely using “The Big Chief’s” sausage-producing mastery. Our meat snacks are carefully tended during the curing process to ensure each portion maintains that easy to chew, delicious, mouth-watering and full-bodied flavour that comes only from 100% beef!

Hazard Analysis Critical Control Points (HACCP)

Big Chief Meat Snacks Inc. was the first meat processing company in Alberta to receive HACCP designation. HACCP is a management system that addresses food safety through the analysis and control of biological, chemical, and physical hazards associated with raw material procurement and production. It includes all handling, manufacturing, and distribution of the finished product. Adhering to these strict guidelines ensures that our products are safe and helps us to maintain superior product quality and safety while increasing productivity.

Canadian Food Inspection Agency (CFIA)

Big Chief Meat Snacks Inc. is a Canadian federally inspected establishment that adheres to the highest standards of quality control. We recognize and meet all CFIA rules and regulations designed to protect Canadians from preventable food safety hazards. At Big Chief it is our policy to exceed these standards and go above and beyond. This is demonstrated by having an on-site CFIA inspector to verify that all guidelines, including HACCP are followed, and are up-to-date. CFIA also monitors for labeling compliance and audits the delivery of a grading program based on objective standards of meat quality and retail.

Safe Quality Food (SQF)

SQF certification goes one step further regarding excellence in quality assurance. SQF certification assures buyers and customers that food has been produced, processed and handled according to the highest standards. SQF certification is your assurance that the products you are buying have passed rigorous international standards for food safety and quality, including HACCP. With SQF, it is even easier to find suppliers with a strong commitment to food safety, ensuring that they meet your high standards. Big Chief is proud to be SQF Certified, receiving 100% on our July 2017 audit.

Sustainability

Loving our home and everything it offers – mountains, lakes, forests, badlands – we are committed to sustainable business practices wherever possible.

There is minimal waste from our manufacturing process, and all waste that can be, is reused or recycled.

We try to source our beef locally as much as possible, only buying from producers who are committed to environmental sustainability and humane handling of their animals, demonstrating best practices in these areas.

We purchase our display boxes from Cascades Canada Inc, and our corrugated shipping boxes from Norampac, a division of Cascades Canada Inc. Cascades is #1 in the Greenpeace Shoppers Guide, and their products are green in every way: recycled, recyclable, and made with eco-friendly processes. Cascades is the number 1 recycler of waste paper in Canada, and ranked number 11 in the world, making Cascades the best possible choice for a supplier when keeping sustainability in mind. We also use paperless billing through email and are conscious of our in-office paper useage.
