All Big Chief meat snacks are made with 100% beef.
Our meat snacks are different than “whole-muscle products” as they are chopped, formed, and carefully tended during the curing process to ensure each portion maintains our signature full bodied flavor and signature soft bite that makes our snacks an easy chew for consumers of all ages. Additionally, our beef stick products in particular differs from our competitors because they are 100% beef, (others often use a blend of beef and pork, or beef and chicken) and do not have a collagen casing which causes the ‘snap’ when you bite, as well as a collagen residual aftertaste.
Big Chief Meat Snacks Inc. has Hazard Analysis Critical Control Points (HACCP) designation that addresses food safety through the analysis and control of biological, chemical, and physical hazards associated with raw material procurement and production. Big Chief Meat Snacks also adheres to all Canadian Food Inspection Agency (CFIA) guidelines that are designed to protect Canadians from preventable food safety hazards, to ensure that food safety emergencies are effectively managed, and that the public is aware of, and contributes to, food safety. We also have SQF certification to assure buyers and customers that food has been produced, processed and handled according to the highest standards. Big Chief processes your order and ships once per week, typically compiled and shipped Wednesday using Canada Post Expedited Shipping. Orders placed after noon on a Wednesday will be shipped the following weeks Wednesday. For same week delivery, please be sure to submit your order by Wednesday before noon. Immediately after your order is placed, you will receive a confirmation email to confirm your order details, and then a second email with tracking information once your order is on its way. The main reason why beef / meat snacks are ‘so expensive’ relative to other snack foods is due to the costs associated with producing it. At Big Chief we are committed to using 100% quality beef. Over the past few years the price of beef has been on the rise due to many factors! Of course there is the simple concept of supply and demand dictating prices, but there are many other factors to consider. Regarding beef specifically, the rising price of other products that have flow-through effects on the prices of beef, and unpredictable weather conditions. For example, rising oil prices have increased the demand for corn-based bio fuels, thus increasing the price of all corn products including livestock feed prices. When prices for livestock feed rise, prices for raw animal inputs increase, in turn driving up prices for meat products like beef jerky. Secondly, beef has a high content of naturally occurring water, so when made into beef jerky using traditional cooking methods nearly 60% of the weight evaporates!

Big Chief beef sticks were introduced as the soft chew version of our beef jerky. Both products are made with the same quality beef and signature spices, but our beef sticks are cooked longer and formed into a round stick that allows for an easier and softer chew. Unlike our competitors similar products that have a collagen casing, and are often a blend of both beef and pork or beef and chicken, Big Chief beef sticks are 100% all beef formed into a round stick that eliminates casings which cause the “snap” when you bite, and a residual after taste. Big Chief Meat Snacks are an excellent low calorie source of protein that also contains minerals such as iron and zinc, which play an important role in human health. Big Chief meat snacks DO contain small amounts of monosodium glutamate that is used to enhance and deepen the natural flavors already present, in order to create the most enjoyable taste presentation for your palate.
All ORIGINAL, JALAPENO & TERIYAKI flavoured Big Chief Products are gluten-free. Our Hot beef jerky and beef sticks DO however contain wheat (gluten). Please see Products for further ingredient and nutritional information.
All Big Chief Meat Snacks DO NOT contain, eggs, nuts, fish, sulfites or seeds. Our beef jerky and beef sticks DO contain SOY. Our Hot flavour does contain WHEAT (Gluten). For more information please see “more info” under each of our products on the Products Page.
STORING BIG CHIEF MEAT SNACKS (5)
All Big Chief 12g, 20g, 25g, and 30g products are vacuum-sealed to guarantee freshness, and shelf stable at room temperature. Big Chief 100g and 120g products are gas flushed and zipper locked also to guarantee freshness and shelf stability. The best way to store all Big Chief meat snacks is sealed, at room temperature, avoiding direct sunlight.
Big Chief meat snacks are stamped with a “use by” date and should be consumed on or before this date to ensure quality flavor and freshness.
While most Big Chief products are single serve portion sizes (12, 20, 25, & 30g), regarding the 100 & 120g resealable packages, we do recommend you REFRIGERATE AFTER OPENING for maximum freshness. In the refrigerator your meat snacks will stay fresh until the “use by” date, although once a package is opened you should try to consume within about a week for the best taste!
We DO NOT recommend freezing our meat snacks, as they will stay fresh out of the freezer until the “use by” date. If you choose to put our meat snacks in the freezer, please make sure you allow them to defrost to room temperature before consuming.

When William Klein was the master butcher of his local delicatessen, customers would come into the store and refer to him as the “The Big Chief”. This nickname, paired with the association of beef jerky created by the Indigenous people throughout history gave birth to the brand Big Chief and the company called Big Chief Meat Snacks Inc. Although our heritage is European, we recognize the Indigenous people as the inventors of dried meats, then referred to as “Ch’arki” or “pemmican” and now known as beef jerky. Fusing both our family and company history, with the product history, we came up with the Big Chief brand name, Big Chief Indian Head logo, and our signature orange and purple colors. While the plastic film packaging of individual sticks and pouches is not recyclable, we do use sustainable and recyclable products where we can in other areas of our manufacturing process. This includes the 100% recycled and recyclable display boxes and shipping boxes that we use, which are made by Cascades Canada Inc. and Norampac, a division of Cascades. Cascades has been operating sustainably since it was founded, and all Cascades products are green in every way, recycled, recyclable, and made with eco-friendly processes.
